Apricot Bar Cookies

Apricot Bar Cookies

My book club met at my friend Jelena’s house last week and this was the dessert served. Everyone raved about it. Try it, it’s easy to make and absolutely delicious!

Preheat oven to 350.

Filling:
2 cups dried apricot halves
2 T maple syrup
¼ c. water

Bring to boil in a small, deep pan and simmer for about 10 minutes, until very soft. Then let cool briefly and process/blend/mash into a jam consistency.

Crust:
¾ cup quick cooking oats
¾ cup flour (white or whole wheat; I used half and half)
½ cup dark brown sugar
½ t baking powder
¼ cup orange juice
2 T milk or soymilk (I used soymilk)

Mix ingredients with a wooden spoon and then press crust evenly into a 12×12 or similar greased pan (it’ll be sticky!). Top with the apricot filling, spread evenly.

Then top with streusel made with 2/3 cup flour (white, wheat, or combo), 2/3 cup dark brown sugar, and 6 T butter or margarine (I used marg.). Work with your fingers into crumbs.

Bake for about 35-45 minutes, until brown and bubbly on top. Let cool well before cutting into bars.
