Pineapple Salmon Kabobs

I got home late from work a few days ago, exhausted after a busy day. My husband Jeff was waiting with a wonderful dinner. I cannot tell you how it cheered me up and changed my perception of the entire day. We have so much power to make each other happy.  Here is the recipe, try it, it will take you to a more exotic place.

Pineapple Salmon Kabobs

Prep: 25 minutes, plus marinating; Grill: 15 minutes – Serves 4-6

  • ½  cup pineapple juice
  • ½  cup coconut milk
  • ¼  cup fresh lime juice
  • 2  tablespoons grapeseed oil
  • 2  tablespoons honey
  • 1  garlic clove, minced
  • 1 ½  pounds Alaskan salmon, cut into 1 ½ inch chunks
  • 6  10-inch wooden skewers
  • 2 ½ cups fresh pineapple, cut into 1 ½ inch chunks
  • 1 large red bell pepper, cut into 1 ½ inch pieces
  • ½ medium red onion, cut into 1 ½ inch wedges, separated
  • Extra virgin olive oil
  • 2 tablespoons shredded coconut, toasted
  1. In medium bowl whisk together pineapple juice, coconut milk, lime juice, grapeseed oil, honey and garlic.
  2. Place salmon in a glass bowl, pour marinade over it, cover and let sit in refrigerator for 30 minutes.
  3. Soak skewers in water for 20 minutes. Preheat grill to medium-high.
  4. Remove salmon from marinade and reserve ¼ cup. Thread salmon, pineapple, bell pepper and onion onto skewers.
  5. Reduce grill heat to medium, coat grill rack with olive oil. Place kabobs on grill; rotate kababs a quarter turn every 3-4 minutes or until thermometer inserted into salmon reads 145 degrees.
  6. Remove kabobs from grill, place on serving planner and keep warm.
  7. Heat reserved marinade to 165 degrees. Drizzle marinade over kabobs and sprinkle with toasted coconut. Serve with side of your favorite rice.
